Eggnog panna cotta with cranberry sauce


Ingredients
  • 1 cup milk
  • 1 3/4 cups eggnog (home made or store bought)
  • 1 Tbsp gelatin
  • Nutmeg, to taste
  • 1 cup cranberries
  • 2 Tbsp- 1/4 cup honey (as you like it for sweetness)
  • 1/2 tsp cinnamon
  • 1 cup orange juice

Homemade herb seasoning and spice mixes


If you grew your own herbs you can make a few of these yourself, or you can supplement with herbs from the bulk section. It's always 10x cheaper to buy spices and herbs in bulk. If you're worried about spices spoiling before you use them you can put them in the freezer.

I always save the jar lids from canned food to use for storage later. You can't re-use it for canning, but if it's washed and dry it makes an excellent jar lid. I also keep glass spaghetti sauce jars and lids and wash them for later use.

Put some pretty fabric over the top and tie a ribbon around it to keep it on. Voila! A gift! If some of the ingredients came from your own garden that makes it even more special.

My Love/Hate Affair with Weaving

This picture (above) is my latest project. I'm trading handwoven fabric for seamstress-ing. I am not very good at sewing, and my daughter will only come to medieval events with me if a) there is archery, and b) she can wear an Italian Ren dress. Archery is easy. We have the supplies and lots of events have the opportunity. However. I cannot sew. Working flat and trying to imagine 3D is pretty much impossible for my brain. If I had a dress dummy I could drape it, but alas. So, enough 18" wide twill to make a Norse apron dress here we go!

I love the repetitive action of weaving. It's very meditative. I find it difficult to weave in the summer, but in the winter I love it. I'm also a total dork, and I like to put on the Lord of the Rings movies (not the Hobbit- those movies were designed to sell video games and toys, especially the first one), and sit there and pretend I'm an elf. I have to say that the new tv series which has been announced is like Schrodinger's Catastrophe... Anyways.

Bee roundup for this year

Beekeeping has a very steep learning curve, and not a lot of leeway for errors. So far going into winter my own hive seems strong-ish, and the one that I'm looking after for a friend is dead. Getting a sneaky walking pneumonia for a month and a half really put a spanner in the works, and probably killed the second hive. Welp, at least my friend will be getting honey from his first year's investment. We can buy a box of bees in the spring and just install them into a hive that is full of drawn comb (ie. full of the wax cells arranged on frames and ready to go). He has a flow hive, so that's going to be interesting to see.

I finally got my own bees wrapped up for the winter and a mite treatment on them a few weeks ago. I also put some loose sugar sandwiched between sheets of newspaper. I tried making a solid candy block, but I did something wrong and it was quite liquid even when dry. Something to try again for next year. Maybe I didn't leave it on the heat long enough, or I didn't use the hand blender long enough to put in adequate air bubbles.I did use my cheese thermometer, which doesn't quite measure high enough, so perhaps it didn't hit the right temperature. I'd never tried candy before, so it's a bit of a mystery to me.

When I put the mouse guard on the front they started coming out at me, so that feisty-ness is a bit encouraging. I knew they wouldn't like the hammering on their hive so I saved that for last on purpose. Good thing, too. Despite the cold they were out for blood! I got out of there before they could sting me. May they stay feisty and alive through the next long months. And then promptly calm down and become docile again in the spring.

I can always hope...

So, I got 2kg of half-finished honey out of my own bees when I took out a frame to keep them from getting honey bound earlier in the summer, and I'll get 1/3 of my friend's honey when I go in there this week and remove and spin out the frames. I don't know how much that will be, but I'm hopeful. And so are some of my friends who have a standing order for honey, too, I'm sure.

I will make mead, darnit. I will. I have everything now except the honey.

Storing vegetables for the winter



We've just bought a house, and included in this lovely, new home is an under-porch root cellar. I've always wanted one, and I even bought books to teach myself how to use one (when I didn't have one and there wasn't even one in my near future- yes, I'm a bit obsessed). They use no electricity, but they can require a bit of attention and maintenance. Most storage-worthy fruits and veggies will keep for 3-6 months tops, depending on the variety and conditions.

Some veggies need a moist environment, and others need a dry one, and some need cooler and others warmer. It can be difficult to provide all conditions in one room. However, the one most important thing that needs to be provided is ventilation. Without that it won't matter if you have everything else perfect.

Birds, feeders and the garden

My Dad loves feeding birds. He spends a lot of money every winter buying enormous bags of bird seed. And the birds love him, too. He has quite a few visiting his feeders for most of the year (he stops feeding them in May and starts up again in September). He loves to look after them, providing cover for them to hide in by planting bushes and native plants, and going out to shovel areas for the ground feeders if the weather is bad. It gives him a sense of purpose.

Battening down the (garden) hatches for the winter


Here's a list of things you can do this month in your garden:

-Planting spring bulbs.

-Mulch up the base of tender roses to protect them from the freeze/thaw cycle- Use triple mix or clean topsoil. Rose shrubs and climbers should be fine without this.

-Dig in mulch and compost for the spring (so you don't have to do it when it's wet and partially frozen).

-Empty and put away anything that has water in it, such as hoses, and don't forget to turn off the water line in the basement that goes outside.

-Wrap up or put straw on plants that need extra winter protection.

-Plant garlic for the spring.

-Do a final and full weeding to get things ready.

Pumpkin and carrot muffins



Makes 12 muffins
Ingredients:
  • 3 large eggs at room temperature
  • 4 medium carrots, grated and squeezed of juice (final volume: 1½ cups shredded carrots)
  • 1½ cups almond flour, spooned and leveled
  • 1½ teaspoons five spice powder (or pumpkin pie spice blend)
  • 1 teaspoons baking soda
  • ½ teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon fine sea salt
  • ¾ cup pumpkin purée (canned or fresh-cooked from pie pumpkins)
  • ½ cup local honey
  • 2 tablespoons almond butter
  • 1 teaspoon melted coconut oil, and a bit extra for greasing the muffin tin if not using paper liners
  • 1 tablespoon sliced almonds
  • 1 tablespoon toasted pumpkin seeds

Steps:
-Heat oven to 350°F with the rack in the middle position
-Sprinkle sliced almonds and toasted pumpkin seeds on top before placing the muffins in the oven.
-Bake for about 30 minutes, or until a toothpick, when inserted all the way comes back out without wet bits clinging to it. The tops should be firm.

Oven or dehydrator tomato parmesan crisps

Apple Peel Chips
  • Thinly slice beefsteak or other meaty tomato (try for 6 cups, or go by how much room you have in your dehydrator/oven- the rest of the recipe is adjustable to your quantities)
  • 2Tbsp olive oil (or other oil as you like)
  • 2tsp sea salt
  • 1tsp garlic powder, or very finely minced fresh garlik (you want it to spread evenly)
  • 2Tbsp parmesan cheese (or more if you really like cheese)

Earl Grey Tea and Lavender Cocktail
  • 3/4 cup earl grey tea (cold)
  • 2Tbsp gin
  • 2Tbsp honey simple syrup
  • 1Tbsp fresh lemon juice
  • 2 sprigs of lavender ( +1 to garnish)

Garter snakes- a gardener's best friend




Garter snakes are only mildly venomous, and even if they bite you they don't produce enough to harm a human. But they are very effective predators, eating slugs, insects, worms, frogs, minnows, and even rodents if the snake is large enough, all of which (except the worms, minnows and frogs) are generally bad for your garden. They have very distinctive markings- three yellow stripes run their length on a dark or black background. Garter snakes give birth to live young, unlike most reptiles. Adults can range in size from 45cm (18") to over a meter (over 45") at the very top end (but that would be a rare one, and probably wouldn't find enough food to stay in your back garden).

Linden trees are extra-ordinarily useful



This tree is also commonly called basswood and lime wood (possible corruption of the Old English and Proto-Indo-European word lind (flexible). It is not related to citrus trees). The N. American version (Tilia americana) can be found from Mexico to Alaska, and there are two genus in Europe (little leaf- Tilia cordata, and large leaf- Tilia platyphyllos), which can be found in southern Norway and Sweden, down into Italy and as far east as the Black Sea. The little leaf genus is far more widespread, and can be found up into Russia and North-eastern Turkey as well as Spain.

More advanced topics- Soil pH


As I learned from my daughter's grade 8 science class notes pH stands for potential of Hydrogen, and it's determined by measuring the number of hydrogen ions. Water has a neutral pH with a balanced number of hydronium and hydroxide ions. This pH is measured as 7. Anything less is acidic and anything above is basic (or alkaline). Lemon juice is 2.2 pH, so it is highly acidic. The best range for plants is between 5.5 to 7.5 (so acidic is better than alkaline), although some plants have evolved to survive in soils outside of that range (like Arabian coffee and highbush blueberry).

Betony- the 'detoxing cure' of the middle ages

I bought two betony plants from Vesey's last year, and put them in a nice, sunny place in my garden, thinking that herbs like sun. Obviously. Unfortunately, I nearly killed the poor plants through lack of education. Betony is a forest plant that enjoys shade. When I realized that the plants were looking beaten down, and just weren't thriving I finally did the research on them that I should have done in the first place.
Ah, well. They survived.
And this year they're looking extremely perky already, and much more like the illustrations of the plant that I've seen in medieval herbals. The next plan is to be my own guinea pig and make some tea. From everything I've read there doesn't seem to be any toxicity problems, unlike angelica which you apparently really shouldn't eat if you're pregnant because it might possibly cause uterine contractions, so it's not allowed to be in any commercially sold food in Canada... Who knew?

In the SCA my current persona is sort of nebulously Anglo-Saxon/Norse, and about the year 900-ish. Really, I just like the comfy clothing, the bling styles, and the history is interesting. Also, I am very interested in the history of medicine and gardening. It's a fascinating period where information of all kinds was becoming much more freely available through the networks of the monasteries and increasing trade. The Anglo-Saxon (Old English) herbals are an interesting mixture of fact and folklore.

I just hope that this herb tastes better than horehound...

Pesto meatballs

Ingredients
  • 1 bunch fresh basil, leaves only
  • 1 clove fresh garlic, minced

I haz bees...


Or, I will soon enough. I need to spread some white clover seeds around the fields near where they're going to live. This is pretty darn exciting. I've been thinking and planning this for about three years now. As I said to my husband the other day, some people take up marathon running. It hurts them *all the time* they are running. I'll only get stung every once in a while, and at the end I'll have honey... It's far less crazy than some people!
Sometime in the next three or four weeks I'll have a whole bunch of little lives to steward. I think I'm ready for the responsibility.

Spring gardens up-springing


My angelica (left) and betony (right) are much happier in their new place in the yard. They are both forest plants and need a bit of shade and a bit of sun. It's too dark for many flowers and herbs in that area, but they're happier than ever.
Kale (the sprouts) and winter savoury (the herb with dark leaves at the top). I'll need to thin out the kale a bit eventually. I didn't expect the seeds to be so prolific after a couple years of hanging out in my seed box.

 My first garden from last year. I have a second row of lasagna garden to the right of it now. It's settling in and getting ready to be planted. (My birthday gift)
The blueberry bushes seem to have survived the minor depredations of a rabbit over the winter.

Columbine (left), beebalm (center), and beardtongue (bottom) are all well-loved by pollinators. They were part of my birthday gift. I was tired of having a barren wasteland of lawn out front. Going to the garden centre was part of my gift. I love the way it smells. I think the added oxygen in the atmosphere gives me a bit of a high, actually. Or, maybe I'm just kinda crazy and love plants that much...
It's been raining for the past week straight. Yesterday the sun finally came out, and it continues today, although it did go down below zero last night (Celsius not Farenheit). I'm hoping my plants did okay. I was so tired I forgot to cover them. Oops.

Starting a new garden bed



A garden is nothing without a good foundation, and that foundation is the soil. Soil has its own complicated ecosystem from worms and beetles on down to tiny, nearly-microscopic filaments of fungi and bacteria. As with anywhere on earth, a healthy ecosystem is essential for optimal growth and health.

In my backyard the soil is a heavy clay over a base of sand. It barely grows grass in some places. But, if you build it they will come... The raised bed that I put in last summer is nearly overflowing with worms, and centipedes are fairly common, too, much to my husband's chagrin. It started off life as a lasagna garden, with a base layer of cardboard boxes recycled after the move, a couple bags of dirt from the grocery store garden center, and some trench-compost piles. Now there's enough good dirt to grow short-ish carrots, and my herbs are taking off. The bed isn't very large because it takes a fair input of cash to start that way, with the boards and hardware to attach the corners. I used two un-treated cedar deck planks and cut them down to a rectangle.

Save some cash- grow your own raspberries




Raspberries are ridiculously expensive in stores, probably because they have to be hand-picked and are very delicate little fruit and they don't last very long after picking. But, raspberry canes are extremely productive, and with a little bit of care and attention you can provide yourself with these tasty, zingy treats for most of the summer. Any investment you make in buying canes will pay you back within a couple years. After that the rest is just gravy. Or something.

The kind you want to get are the 'everbearing' variety, which means that they'll fruit twice in one season. Yes, even in Canada. I also got a variety that also has fewer prickles on the canes. This is a good thing come picking time.

Asparagus season is coming...


I know this is a little early, but it's good to be prepared. In a couple weeks it will be time to plant your crowns (the root ball). Whatever you plant this year won't be able to be harvested, but in two years, however, you will be rewarded in early spring with a bonanza of tasty shoots. It's a longer-term investment in the beginning, but the plants are perennial and will live for 15-20 years.

One of the objections I've seen to planting asparagus is that it takes up too much room for a crop that only pops up in the early spring. The remedy to that is to interplant it with strawberries. They both have the same soil needs, and the asparagus won't interfere with the strawberries much, and vice versa. Problem solved.

Asparagus is an interesting plant in that it is either male or female. The technical term for that is dioecious. The male stalks are more productive and live longer, so if you are planting heirloom plants you'll need more than if you get a hybridized all-male variety, or weed out the female plants and put in more males in another year. If you have a smaller space to grow in it might be better in this instance to get a hybrid. One of the very few times I'll say that, actually...


How to plant it


Keep in mind that asparagus prefers full sun, but will tolerate a bit of shade, and they need a lighter, well-drained soil that warms up quickly in the spring. Since any standing water will rot the roots, raised beds are a perfect environment for them. The bed should be dug over with plenty of compost and manure to give the plants a good start.

More dyeing with weld

I think that I finally got this one down. Weld is so very easy to work with. It brings on a bright colour even with the high mineral content of the water from my tap. It's given me the confidence to try some of the other, more difficult colours...

And a very apropos colour for the spring solstice that just passed.

Natural dyes

I've been experimenting with natural dyes this week. I bought a 100% lambswool twill blanket at a thrift store for $6 and made it into a Skjolenham hood and an Anglo-Saxon jacket. Unfortunately, it was beige. I dislike beige. Intensely. So, I thought that I could try re-dyeing it.

That was this week's experiment.

I tried the hood first because it was smaller, and I would be less unhappy if it failed horribly. I used powdered weld extract, and it came out a gorgeous dark spring green. Considering I used weld to colour and alum as a mordant it should have come out yellow. I suspect that the original mordant on the blanket was copper (which turns weld green).

Next was the jacket, and it wasn't as much of a success. I suspect that the larger volume of cloth in my kettle (ie. canning pot) made the movement of both mordant and dye a bit more constricted. As well, I was using ground up madder root, and I possibly didn't let it 'extract itself' long enough before putting in the cloth on the first attempt. So, it came out a bit motley. I washed it thoroughly in the washing machine and tried again. It came out a much more uniform colour. It may have gotten a bit too warm as it has an orange-ish tinge to it, also, the probably use of copper as the first dye mordant would have done that as well. I did find my dye thermometer afterwards, though, which is good. I won't have to guess at any future temperatures for dyeing.

With this warm weather my saffron popped up. I hope they can weather this weather and last until fall... *sigh* I've nick-named that grey squirrel that lives in my backyard 'Stew'... Because that's what I'm going to make him into eventually when I snap because he's eating my saffron bulbs and other things that he likes... The chicken wire is slowing him down a bit, thankfully.

Leftover roasted root vegetable soup


You can make this recipe dairy free and vegan if you substitute coconut oil for butter and full-fat coconut milk for the cream.

If you don't have leftovers you can roast up some cauliflower, parsnips and carrots

Leftover roasted root vegetable soup with caramelized onions and apples
  • Roasted root veggies
  • 2 tablespoons butter
  • 2 cloves garlic, minced (uless there's already garlic in your roasted veggie mix)
  • Enough vegetable broth to cover your veggies
  • 1/2 cup cream (or more, to taste, especially if you're making a big pot of soup)
  • 1 large yellow onion
  • 1 large apple, diced
  • 1 teaspoon oil of your choice (or butter)
  • Salt and pepper

Hot spiced cider




Hot Spiced Cider
  • One small apple (optional)
  • 1/2c brown sugar or dark honey
  • 8c apple juice or local cider
  • 1tsp whole allspice (I never have it around, but it's yummy if you do)
  • 1tsp whole cloves
  • 4-6 whole cinnamon sticks

Rhubarb crumble

I have waaaay too much rhubarb in the freezer and it needs to get used up.


Rhubarb Crumble
  • Enough roughly chopped rhubarb to cover the bottom of your baking dish to a depth that makes you happy (but not too thick or it's going to be quite sour- unless you like that)
  • 1/3c unsalted butter or butter substitute (unless you have salted on hand- no biggie)
  • 3/4c ground almonds
  • 1/3c honey, preferably local (non-store-bought has more flavour) or use a syrup of your choosing for the vegan option
  • 1tsp vanilla extract (optional unless you have something gf)
  • 1tsp ground cinnamon
  • 1/2c flaked almonds (if you can find unbleached all the better)

Herbal hot chocolate

Herbal Hot Chocolate 
  • 3 oz really good chocolate (the best you can afford)
  • 2c milk of your choice (cow, almond, rice, coconut, etc)
  • 1/4c cream (optional- cow or coconut)
  • 2tsp dried herbs (combinations suggested below, or experiment)

Method


  • Put your milk and herbs in a small sauce pan and heat gently and slowly (you don't want to scorch the milk and have it stick to the bottom of the pan
  • Take it off the heat and let it cool while you chop the chocolate
  • Strain the herbs out of the milk and back into the sauce pan. Add the chocolate.
  • Heat again very slowly and over a low heat. The chocolate will melt. Whisk very frequently.
  • Pour into a mug when it is quite warm to the touch, but not boiling.

List of good herbs and other ingredients- mint, bee balm, lemon balm, lemon verbena, sweet violet, rose, citrus (from organic peels), ginger, lavender, raspberry leaves

Herb combination suggestions- White chocolate and lavender, milk chocolate with citrus and ginger, white chocolate with sweet violet and rose, dark chocolate with raspberry leaves and mint, dark chocolate with lemon balm and ginger.

How to wean your garden off its oil dependency- Step 1: Fertilizers

Happy New Calendar Year to everyone! I work in a school, so for me the year 'ends' in June and starts again in September... It also ends in the fall and starts again in the spring... It's an endless cycle of endings and beginnings, and odd spaces in between. This liminal time of the year is when I like to dream about my spring garden (and try to stay away from garden seed catalogues. Danger, Will Robinson!).

Growing your own veggies and herbs not only ensures that you have the best quality and highest nutrition, it can also reduce your impact on the environment. If you want to take that to the next level then you need to wean your garden off of its dependency on oil. The next level is barely a short step, and not hard at all to do.

Most commercial fertilizers are made from oil (natural gas in the case of nitrogen), or with the use of oil or coal in their production. In the end it's all the same chemicals (nitrogen, phosphorus and potassium), but where the chemicals come from, and what pollution is left behind in creating them, matters.
