Homemade herb seasoning and spice mixes


If you grew your own herbs you can make a few of these yourself, or you can supplement with herbs from the bulk section. It's always 10x cheaper to buy spices and herbs in bulk. If you're worried about spices spoiling before you use them you can put them in the freezer.

I always save the jar lids from canned food to use for storage later. You can't re-use it for canning, but if it's washed and dry it makes an excellent jar lid. I also keep glass spaghetti sauce jars and lids and wash them for later use.

Put some pretty fabric over the top and tie a ribbon around it to keep it on. Voila! A gift! If some of the ingredients came from your own garden that makes it even more special.





Onion, garlic, or chili powder

Ingredients
  • wash, peel and thinly slice your onions, garlic or chili peppers (de-seed if you want it less spicy)
Directions
  1. Dehydrate in the oven at less than 170 F or in a dehydrator until crispy but not burnt.
  2. Grind in a clean coffee/spice grinder, blender, or food processor.
  3. Let dust settle before opening!
  4. Store in jars with air-tight lids away from light for up to six months.


Taco Seasoning

Ingredients
  • 1/4 cup chilli powder
  • 1/4 cup cumin powder
  • 1 Tbsp garlic powder
  • 1 tsp oregano (powdered or crushed, dried leaves)
  • 1 Tbsp onion powder
  • 2 tsp Paprika powder
  • 1/4 cup salt
  • 1 tsp ground pepper
Directions
  1. Makes about a cup.
  2. Put in a large jar with air-tight lid and shake until mixed.
  3. Store away from light for up to six months.


Curry Powder

Ingredients
  • 1/2 cup Paprika powder
  • 1/4 cup Cumin powder
  • 1 Tbsp Fennel powder
  • 1 Tbsp Fenugreek powder
  • 1 Tbsp Mustard powder
  • 1 Tbsp Red pepper flakes (if you want more heat)
  • 3 Tbsp Coriander powder (optional, but I like it)
  • 1/4 cup Turmeric powder
  • 1 Tbsp Cardamom powder (optional)
  • 1 tsp Cinnamon powder
  • 1/2 tsp Clove powder (optional)
Directions
  1. Mix and store in a jar with an air-tight lid for up to six months.


Italian Seasoning

Ingredients
  • 1/2 cup Basil leaf
  • 1/2 cup Marjoram leaf
  • 1/2 cup Oregano leaf
  • 1/4 cup chopped Rosemary leaf
  • 1/4 cup Thyme leaf
  • 2 Tbsp garlic powder (optional)
Directions
     1.Mix and store in air-tight jar for up to a year.
