Apple peel chips and apple cider vinegar


Apple Peel Chips
  • Some apple peels
  • Cinnamon and sugar to taste
  • 1/2 Tbsp melted butter or other neutral oil
  • Pinch of salt



Method

Pre-heat the oven to 400F.
Mix together your cinnamon, sugar, butter and salt. Toss in the apple peels and stir to coat. Spread on parchment paper on a baking tray. Sprinkle the leftover cinnamon sugar on top. Bake for 10-12 minutes, or until just lightly brown on the edges.
Store in an air-tight container (if there are actually any left over).


Apple Cider Vinegar

  • The peels cores and any brown bits from about six large apples (but not moldy or rotten)
  • A quart-sized jar (approx.)
  • The ring from a canning lid or an elastic band
  • A (clean, new) coffee filter, or a clean, breathable cloth
  • 2.5 Tbsp granulated sugar (optional, but helps to speed the process)
  • 2.5 cups boiled and then cooled water
  • Note: the ratio for sugar to water is 1 Tbsp per 1 cup if you are using other-sized jars
Method

Place your apple bits and sugar in the jar, then fill to 3/4 full. Make sure your apple bits are completely submerged and have room to expand while staying submerged. Any bits that are exposed will become moldy and ruin the batch.
Allow to sit in a warm and dark place for two weeks.


Other uses for apple peels- tea, smoothies, salad garnish

Edit: I tried this vinegar, and I'm not sure about my first result, but I'm definitely using it to keep my dishwasher from liming up! Much cheaper than buying it from the store. I got a tonne of half-price organic apples at the store yesterday, so I'll be making sauce and chips this week.
